Modified Atmosphere Packaging (MAP), also known as Controlled Atmosphere Packaging, Gas Flush Packaging and Vacuum Packaging, is the process of changing the gaseous environment surrounding sensitive products to promote extended shelf life and quality retention. MAP has been used for nearly half a century to successfully expand distribution capabilities and minimize damage of perishable products.
